The first time I tried absinthe was at a historic bar in New Orleans’ French Quarter, but I didn’t become a fan until visiting Wormwood — San Diego’s first absinthe bar.
Why it matters: The absinthe flight in the vintage Paris-inspired secret garden is a fun opportunity to acquire a taste for the elixir known as “the green fairy” and to hear poetry and live jazz.
How it works: The server brings a large, glass tower of ice water to the table with a glass of straight absinthe, instructions and a story to tell.
- You turn the spouts to slowly release water droplets onto a sugar cube that dissolves over a special spoon and into the glass of absinthe below.
- Once filled, Absinthia’s barrel age spirit was smooth and sippable with an herby, black licorice flavor profile.
For cocktails, try the La Vie en Southside — absinthe verte, gin, fresh lime juice and house mint syrup served over pebble ice.
